5 cups of diced carrots
1 cup of diced onion
2 cloves of garlic
3 chicken stock cubes
3 cups of water
Gently boil until carrots are tender, cool and then blend until smooth.
Smells delicous and tastes even better.
This recipe makes 3 serves. You could add more water if you like a thinner soup but the thickness of this really makes it more filling. IMO
1 serve = 2 cups of low starch vegetables that are allowed on Optifast.

Excuses
I started to get a cold on Sunday afternoon, the kidlets are also sick with a cold. I'm tired and worn out and would just love to wriggle down in my bed and sleep. The unfortunately reality of being a SAHM is that you don't get sick leave and you're on call 24 hours a day, even when you are sick yourself.
Yesterday, I followed Optifast to the T. It tasted terrible but I endured it. I did consider chucking in the towel and following Weight Watchers but I knew that, that would be short lived. I felt crap all day long.
This morning I woke up and decided that I really needed to eat something in the hope that it would help me start feeling better. So I had breakfast. 1 slice of vegemite toast and then 2 slices of toast with a little bit of ham, lite cheese and coleslaw (full fat) dressing, covered in lashing of margarine. I ate it quickly without really thinking about it. I went to bed hungry and I woke up feeling even hungrier. I'm not used to feeling hungry. I just wanted to feel better.
I can hear you already; Did you need 3 pieces of toast? Why did you smother it in margarine? Your not serious about losing weight, if you were you would have made a healthy choice. It's true, old habits die hard. I actually feel better now, well not better but I have energy.
The whole point of coming off the Optifast was to make some homemade chicken noodle soup, in the hope that it would speed up my recovery. The reality is I can't afford not to suck it up and just do this. The cold may take a day or 2 longer to pass but my lunch will be Optifast, dinner will be Optifast, I will drink 3 litres of water and eat my 2 cups of vegetables as soup. I am serious about losing weight.

1st shake down
Well I have just had my 1st Optifast shake. I had to wash each mouthful down with some water but that's okay. I'm sure that the taste will grow on me, it will have to.
Optifast is a VLCD (Very Low Calorie Diet) and is recommended for people who are seriously overweight. I am seriously overweight. I weighed in this morning at a 126.9kgs, I'm 172cm tall and my waist (at my bellybutton) is 149cm. I'm going to get my partner to take my before photos when he gets home from work tonight.
This isn't going to be easy but I'm committed to losing this weight.
